PRODUCTION TECHNOLOGY The harvest begins in mid-November and lasts until the Immaculate Conception when the bunches still present in the vineyard, infused with Botritis Nobile, have taken on a golden straw yellow colour. The vinification of the must obtained from this parsimonious harvest is followed by fermentation in small oak barrels with a capacity of 225 liters (Barriques). This fermentation, controlled over the following 3 years with painstaking filtrations, transforms a good part of the sugars obtained from the over-ripening of the grapes into alcohol, giving rise to the LOAZZOLO sweet - not sweet wine which expresses a sincere and open body in its taste.
TASTING NOTES Served at a temperature between 10 and 12 °C in crystal tulip glasses, it can be enjoyed with goose liver, blue cheeses, small pastries, eggnog and hazelnut cake.
GASTRONOMIC COMBINATIONS Aged cured meats, crustaceans, molluscs and blue cheeses.
