PRODUCTION TECHNOLOGY The grapes, obtained from a "mountain vineyard", are presented at the end of September with a good degree of ripeness and still a marked acidity, a decisive element for long conservation. The harvest is strictly by hand and the grapes are collected in plastic boxes. Soft pressing, without preventive pressing. Fermentation takes place at very low temperatures, necessary to transmit and fix the aromatic framework of this wonderful grape. The wine obtained, in March of the year following the harvest, is bottled, where, after chaptalization and the immediate addition of batch yeasts, it undergoes refermentation. Once this process, which gives rise to the characteristic foam, is completed, the maturation on the lees follows, which lasts about 24 months. At the end of this period, the "clarification" and "disgorgement" operations prepare it for consumption, which takes place about three years after the harvest.
TASTING NOTES Fine, intense perlage, persistent foam, generate an elegant creamy, enveloping sensation, with greenish reflections tending towards pale straw yellow. Citrus, floral scent, with mineral notes aimed at carbide. Evolution of honey and acacia flowers. Full, dry taste, hints of wheat, alfalfa, small ripe fruit, hints of Amalfi lemon and Savona chinotto. Ambitious finish, supported by dryness and persistent and irrepressible aromatic complexity.
GASTRONOMIC COMBINATIONS Aged cured meats, crustaceans, molluscs and blue cheeses.
