GASTRONOMIC COMBINATIONS Aperitif par excellence. Excellent to be used throughout the meal, it goes well with appetizers and seafood first courses, it goes very well with grilled or fried fish, shellfish and also white meats and vegetables. TERROIR The wines of the Anima Lavica line are produced from vineyards grown on the outcrops of volcanic rocks that arrived in the Apennines from afar: it is the gray tuff erupted from the Phlegraean volcanoes more than thirty thousand years ago, in the terrible eruption of Campanian ignimbrite. The burning clouds went up the valleys for about a hundred kilometres, settling among the gentle hills of the Calore valley. The presence in the Telesina Valley of an entirely volcanic terroir made of suspended plateaus and basins, with sandy, glassy soils that crackle when walked on, with a characteristic dark gray colour, friable and easy to work, extremely permeable, is surprising. , in a temperate environmental context, evidently very different from that of the coastal volcanoes of origin, characterized by the contrasts of the Mediterranean climate. The mineralogical complex of these soils gives them particular nutritional qualities in a completely unique interaction with the vine. The result is that the wines are an absolute surprise to the senses, a concentrate of sapidity and freshness. The complexity that this singular terroir confers is evidently reflected in the minerality of the wines and their elegant aromas.
