Around the 12th century, an ancient villa known as “il castellare de Ylice” stood near our cellar. The name was probably due to the Latin term ilex (holm oak), a particular variety of oak very common in our area. To date, no trace has remained of this historic villa, but the passion and respect we have for our territory has prompted us to pass on the name of that ancient presence.

VARIETY Verdicchio 100%

TYPE OF SOIL The vineyard extends over an area of 2.5 hectares on medium-textured sandy soil with south / south-east exposure at an altitude of 350m above sea level.

VINIFICATION The clusters are harvested in two different ripening periods: 50% at early ripening and the remainder at complete ripening. Then begins the soft pressing of the grapes with the selection of the must. A small percentage of the grapes undergoes a cold skin maceration. Alcoholic Fermentation: in steel tanks, at a controlled temperature between 14/16 ° C for a period of 10/12 days. Malo-lactic fermentation: not carried out.

TRAINING SYSTEM The vines are Guyot-shaped.

COLOR Straw yellow with evident greenish reflections, it is crossed by excellent brightness.

PERFUME The olfactory baggage is intensely perfumed, highlighting in particular fragrant, floral and fruity sensations. You can perceive notes of acacia and yellow rose, white pulp peach and a clear aroma of almond, typical of the Verdicchio grape. In closing, a slight vegetal touch.

PAIRINGS First courses of meat, Seconds of white meat, Seconds of fish.

TASTE The flavor is distinguished by the complexity of the aromas, the persistence and above all by the important sapid tone that will determine durability and elegance in the evolutionary capacity; in the finish, fresh and enveloping, a pleasant citrus scent emerges.

NOTES Ylice is the wine with which we wanted to capture and enhance the value and typicality of the La Spina vineyard; a Verdicchio vineyard placed on sandy soil that rises close to a luxuriant forest of English oaks, in effect a small Cru within the Verdicchio Classico cultivation area. Taking care of the vines in full respect of the territory, carefully checking every single intervention and working with passion in the cellar allows us to offer you a unique wine, made of great freshness, excellent drinkability and innate elegance.

AGING Aging in steel tanks with prolonged batonnage for a period of 18/20 months.
