Sauvignon Trentino DOC 2019 - Cantina Boem

Sauvignon is a vine much appreciated by the general public, so much so that it is spread all over the world and interpreted in different styles which depend on the harvesting period, the vinification, whether it takes place in traditional steel tanks or wooden barrels, and the pedoclimatic characteristics of the land. The vineyards planted with Sauvignon di Boem are located on hilly terrain at 400 meters above sea level. They are exposed to the south and have a planting density of 5,000 vines per hectare. The grapes are harvested by hand in the second half of September and vinified in traditional stainless steel tanks at a controlled temperature and the wine thus obtained remains on its lees for six months. The result is a Sauvignon with a classic, elegant and full-bodied style. Straw yellow color with greenish reflections. The nose expresses all the peculiarities of the vine, with clear herbaceous sensations in the foreground which translate into hints of boxwood and citrus notes followed by elderflower and nutmeg. The taste is characterized by an invigorating acidity and a pleasant sapidity to close the circle. The finish is long and intense. Excellent for an aperitif with salmon vol-au-vents or to accompany fried baby octopus.
