PRODUCTION AREA Vineyards located on the Abruzzo hills. VARIETY Passerina 100% PRODUCTION TECHNIQUE After the grapes are harvested and processed, the basic cuvée is obtained which is introduced into stainless steel autoclaves where a first fermentation takes place (the wine is kept on the noble lees for a period lasts from 3 to 5 months.After the first fermentation, the following are added: sugars, yeasts and nutrients to start the refermentation which takes place in small autoclaves at low temperatures.After the refermentation, the sparkling wine is decanted and filtered in isobaric conditions, then it is refrigerated, filtered again and bottled. FOAM Abundant and evanescent, fine-grained and persistent perlage. COLOR Pale yellow, bright and clear. TASTE Fruity, delicate bouquet, characteristic of great elegance. PAIRING Ideal as an aperitif. Recommended to accompany first courses fish based ALCOHOL CONTENTS 12% vol RESIDUAL SUGAR 1,1% SERVING TEMPERATURE 6/8°C
