Vinification and ageing: Spontaneous fermentation from pied de cuve of our grapes in the absence of sulfur dioxide, at a controlled temperature in a cement tank. Aging: 12 months in tanks and 4 months in bottles RECOMMENDED TEMPERATURE: 13°C FOOD PAIRINGS: fish-based dishes, white meats, it also goes well with semi-soft cheeses.
