Grape variety: Grillo 100% CHARACTERISTICS: Colour: straw yellow with abundant, fine and persistent perlage. Perfume: fresh and sweet fruit crossed by a nice mineral vein, dried fruit and hints of bread. Taste: mouth of great freshness. The beautiful acidic vein is supported by a structure that is up to the task. Vinification and ageing: Fermentation at a controlled temperature in steel tanks is followed, after 12 months, by tirage with the start of slow fermentation in the bottle according to the traditional method. The bottles remain in the stack for 30 months [totale dalla vendemmia 72 mesi] guaranteeing an unmistakable bouquet due to the contact and autolysis of the yeasts. After disgorgement, the classic method undergoes a further refinement in the cellar for a few months.
