Before the harvest, which usually takes place during the first ten days of September, the grapes are carefully selected in the vineyard. Subsequently, a gentle pressing is carried out, to then move on to alcoholic fermentation at a controlled temperature in stainless steel for about a week. The refinement takes place on the fine lees, for about 7 months in order to increase its complexity.Collio Sauvignon is a wine that in the glass has a bright straw yellow color with greenish reflections. The nose offers a large fruity bouquet where the citrus aromas of grapefruit and exotic fruit prevail, followed by elegant vegetable and aromatic aromas.An inviting and easy-drinking wine, which stands out for its great aroma and persistence on the palate, as well as a rather fat flavor which makes it ideal for accompanying appetizing aperitifs. A versatile white that will immediately delight the palate when tasted and is well suited to numerous fish-based culinary preparations including seafood salads, baked fish, soups, gratins, as well as egg-based dishes.
