AMMÀNO IN SHORT Grapes: Zibibbo, Vigna Torrenova Soil: predominantly clayey, with little skeleton, deep and free from stagnation, greenish-brown in color Vineyard: 2008 planting, espalier training, Guyot Vinification: manual stripping and maceration on the skins for 7 days in steel, with manual punching down of the cap Alcoholic fermentation: spontaneous, with wild yeasts Malolactic fermentation: spontaneous, completely carried out Aging: on the fine lees, in 10 hl Slavonian oak barrels for at least 5 months Average production: around 2,000 bottles/year
