It grows in low shoots on guyot systems at an altitude of 450 m slm level in Pochi di Salorno. The favorable position of the vineyard, the very low yield per hectare and the ideal temperature range between day and night are the prerequisites for bringing these grapes to an ideal ripening.
Grape variety: Sauvignon – Alto Adige DOC Origin: Grafted on a slow growing rootstock and on a metal wire frame (Guyot), this Sauvignon thrives at an altitude of 450 meters slm level on clays and calcareous gravels from moraine sediments of the Bucholz hamlet (municipality of Salorno) . The good location of the vineyard, very low yields and warm days and cool nights are ideal Prerequisites for optimal ripening of the grapes. Yield per hectare: 55 hl Vinification: The grapes are crushed and destemmed in a pneumatic tank press. Before the pressing process, eight to ten hours of cold maceration takes place in order to enhance the precious fruitiness of the wine. Then the grapes are gently pressed and through natural sedimentation clarified by the cloudy substances. The alcoholic Fermentation takes place with selected yeasts at a controlled temperature of 19ºC in a stainless steel container. Characteristics: Fine and aromatic white wine which thanks to its pleasant acidity keeps very well and is an interesting, developed balanced aroma. Colour: from greenish to straw yellow Smell: nettle, honey, pepper and elderberry Taste: rich, harmonious, good fruit with acid persistence Gastronomic combinations: Appetizers, asparagus, fish, vegetable dishes Serving temperature: 10 - 12 °C Period validity: 3 – 5 years
