CHARDONNAY PETER ZEMMER Grape variety: Chardonnay – Alto Adige DOC Origin: grows in low shoots on guyot systems in the best vineyards of the plain around the town of Cortina ssdv The favorable position, ideal irradiation and good ventilation of the bunches favor the ripening of excellent quality grapes. Yield: 70 hl per hectare Vinification: the grapes are left to macerate for a few hours before pressing to accentuate the fruity aroma of the wine. They are then carefully pressed and the deposits are left to settle naturally. The alcoholic fermentation takes place in steel tanks with pure yeasts at a controlled temperature of 19 °C. Organoleptic characteristics: wine that offers a wide carousel of fruity aromas, intense, pleasant and with a pleasant persistence. Colour: greenish yellow Bouquet: delicate, typically fruity, with a hint of banana and melon Taste: dry, fresh, lively, pleasantly full Pairings: appetizers, first courses and white meats Serving temperature: 10 – 12 °C Resistance to aging : 23 years
