GRAPES
Chardonnay (70%) and Pinot Noir (30%), coming from the Arzelle, Rovere, San Carlo and Ragnoli estate vineyards; all with high planting density (10,000 vines/hectare).
SURRENDER
8,000 kg of grapes per hectare, with a must yield of 30% equivalent to 3,200 bottles per hectare.
WINEMAKING
Soft and progressive pressing of the bunches with fractionation of the musts; alcoholic fermentation in steel vats and refinement of the best parcels in oak barriques, where they mature for 6 months in contact with the yeasts.
MATURATION
Preparation of the cuvée in the spring following the harvest, exclusively with 100% wines of the vintage. Second fermentation in the bottle and subsequent aging on the yeasts for at least 5 years, followed by another 6 months after disgorgement.

Zero Dosage.

ORGANOLEPTIC CHARACTERISTICS: VISUAL APPEARANCE
Abundant and creamy foam, with good persistence of a faint crown; subtle and sinuous perlage.
ORGANOLEPTIC CHARACTERISTICS: COLOR
Intense straw yellow with slight antique gold nuances.
ORGANOLEPTIC CHARACTERISTICS: FRAGRANCE
Fine and elegant, characterized by an opening on notes of yellow fruits followed by the light citrus aromas of candied citron, and hints of small pastries.
ORGANOLEPTIC CHARACTERISTICS: TASTE
on the palate, the wine is characterized by great balance; the great structure, the vivid acidity and the persistent final flavor come together with dynamism and give great personality.
COMBINATIONS
when paired, it brings out structured first courses and fresh stuffed pasta, stewed fish second courses, meat-based dishes and cheeses, including mature ones.
