GRAPES Chardonnay (90%) and Pinot Noir (10%), coming from the most suitable vineyards of the 19 municipalities of Franciacorta. YIELD 9,500 kg of grapes per hectare, with a must yield of 60%, equivalent to 7,600 bottles per hectare. VINIFICATION Soft and progressive pressing of the bunches with fractionation of the musts; alcoholic fermentation in steel vats. MATURATION Preparation of the cuvée in the spring following the harvest, with the addition of 10% reserve wines from the best years. Second fermentation in the bottle and subsequent refinement in contact with its own yeasts for at least 18 months, followed by another 2 months after disgorgement. DOSAGE Demi Sec. FORMATS Bottle 750 ml. ORGANOLEPTIC CHARACTERISTICS: VISUAL APPEARANCE Soft and abundant foam, with thin and persistent perlage. ORGANOLEPTIC CHARACTERISTICS: COLOR Straw yellow with slight greenish reflections. ORGANOLEPTIC CHARACTERISTICS: BOUQUET Wide and captivating, delicate, pleasantly enhanced by notes of pastry, acacia flowers and lime tree. ORGANOLEPTIC CHARACTERISTICS: TASTE Pleasantly sweet, round and harmonious, supported by good acidity. COMBINATIONS Ideal to accompany desserts, pastries, leavened desserts, fruit or jam tarts, fruit salads. SERVING TEMPERATURE 6-8 °C.
