The vine, of French origin, was introduced into Friuli during the domination of the Habsburg and was widespread at the beginning of the 20th century. Fresh and captivating wine, with unmistakable and multiple aromas in which notes of exotic fruit, yellow pepper, tomato leaves, mint, lantana and boxwood are highlighted. It is a traditional Friulian wine.
Mainly trained in Guyot, the vines of our Sauvignon have their roots in the Ponca (Cormòns flysch in technical terms), soil composed of marl and sandstone of Eocene origin stratified under the sea over the millennia, which gives our wines flavor and unique minerality. The harvest took place during the first half of September. The healthy and perfectly ripe grapes were harvested by hand, in small boxes, to preserve the integrity of the berry. Delicately destemmed and left to macerate for a short period, it was then softly pressed, and the must thus obtained was clarified by decantation. This was followed by fermentation at a controlled temperature in stainless steel containers. At the end of fermentation, the wine was kept on the yeasts for a few months, to increase its complexity, creaminess and suitability for aging. Once bottled, it rests in temperature-controlled rooms for refinement.
