Planting density of 5000 vines per hectare and production of 70-80 q. Harvest: manual in small 20 kg baskets and selection of the grapes upon arrival in the cellar. First ten days of September Vinification: soft pressing and natural cold decantation of the must. Only the must ferments in steel vats at a temperature of 16°C to enhance the original characteristics of the terroir. It completes its evolutionary path, stopping on the fine lees before the bottle. Colour: straw yellow Nose: fragrant, with romantic notes of essential herbs Taste: rich and pleasantly soft Storage: away from light, with horizontal bottle, controlled temperature and humidity 17°C – 70%. Serve at a temperature of 9-11°C. Pairings: Sardinian fregola and Sardinian gnocchi alla Carlofortina, semi-mature cheeses. Sea bass with Vernaccia and capon with potatoes and fresh cherry tomatoes.
