A “must” from the Pasetti company. Authentic mirror of the strong Abruzzo tradition, which is expressed here in the excellence of one of its native vines. This young pecorino in purity today represents a third of the company's production.
Sensory analysis – Brilliant straw yellow colour. Hints of dried yellow flowers, citrus fruits, dried fruit and bread crust. The acidic vein and the marked minerality are balanced with an excellent structure and a long persistence. Food Pairings – Fish first courses, white lasagna, fresh cheeses and white meats.
Production Area The vineyards are located in the Municipality of Pescosansonesco at 550 m slm and in the Municipality of Capestrano at 450 m slm , both within the Gran Sasso and Monti della Laga National Park. Characteristics of the variety Pecorino is a native Abruzzese variety rediscovered a few years ago thanks to the recovery and selection work of a few audacious winemakers. It prefers fertile soils with high water availability. The wine is characterized by marked citrus notes and freshness in the mouth accompanied by the right body and persistence on the palate. 100% Pecorino vineyard, density of 5200 vines/ha, yield of 120 q/ha, mechanical harvesting in the first ten days of September. Vinification In white: soft pressing and subsequent static decanting. Fermentation in steel with selected yeasts at 14-16°C. Aging Only in steel with aging on the fine lees. To be kept at 14-16°C and preferably consumed within 5 years of the harvest. Sensory analysis Brilliant straw yellow colour. Hints of yellow pulp fruit and citrus notes. The acidic vein and sapidity are balanced with an excellent structure, persistence and softness.
