Sweet wine, passito, with a long tradition, which takes its name from the "recie" of the Garganega grape, lovingly selected. It is a wine much loved by the Pieropan family who have been producing it with the traditional system for several generations.

Description

Denomination Recioto di Soave DOCG. Geographic location Hilly area of the classic Soave. 100% Garganega grapes. Age of the vines Planted in 1980. Vineyard Volcanic soil, rich in basalt and tuff of Eocene origin. Altitude 300 mslm Exposure west. Yield 60 hl per hectare (2 kg per plant). Pergola Veronese training system with 4,000 vines per hectare. Defense method Certified organic viticulture. Gem load 8 gems per vine. Harvesting method Manual harvesting with careful and accurate selection of the ripest and loosest grapes. All the grapes are collected in small crates and brought to the farm for drying. Withering The grapes are transferred manually to rest in a loft on bamboo trellises. The withering is in natural air and lasts until the end of February on average. The natural climatic conditions allow the dehydration of the berry and the loss of water with the development of noble rot. The must yield is very low: a quarter of the original weight of the grape. In years with unfavorable climatic conditions it is not produced. Vinification technique Destemming and pressing of the grapes. Selection of the must and fermentation at controlled temperature (14°-16° C) in 2,500 liter barrels. Organoleptic test Colour: golden yellow, placid, consistent, brilliant - Bouquet: full and noble. Upon careful listening, hints of ripe fruit, in particular quince and dried apricot - flavour: sweet with great composure, soft and warm. Long and persuasive fabric, with a remarkable character - alcohol content: 13% - acidity: 6‰ – 6.5‰ - residual sugars 110 -120 g/l. Aging Aging of the wine in 2,500 liter oak barrels for a period of about two years and aging in glass for six months. Pairing Excellent meditation and dessert wine. Ideal at the end of a meal with almond sweets, simple pasta, focaccia with grapes and fruit tarts, dried fruit and fatty and blue cheeses. Traditionally paired with Pandoro di Verona.
