From one of the oldest vines in the world, Moscato Bianco, our Passito di Noto is born. Passito is an ancient wine that becomes current with a modern drying system. Explosive aromas of exotic fruit, jasmine, candied citrus, it is both complex and easy to love. The ideal companion of the great Sicilian tradition of sweets and ice cream.
VINEYARD: Buonivini. VARIETY: Moscato Bianco. TYPE OF SOIL: very calcareous soils, abundant skeleton and small dimensions, fine texture with light colored clay fraction. ALTITUDE: 40 meters above sea level YIELD PER HECTARE: 50 quintals TRAINING SYSTEM: Guyot. PLANT DENSITY: 4,500 plants per hectare. HARVEST PERIOD: 25-30 August. VINIFICATION: the grapes are harvested - well ripe - at the end of August and subsequently dried in the fruit cellar, in 5 kg crates in a ventilated environment at 23 ° C. When they have lost half of their weight, about 40 days later, the grapes are pressed and the must obtained, particularly rich in sugars, ferments slowly at 18 ° C in steel tanks for more than a month, until bottling. BOTTLING PERIOD: first half of April. ALCOHOL CONTENT: 12% vol. RESIDUAL SUGAR: 218 gr / l. TOTAL ACIDITY: 9.00 gr / l. PH: 3.30. AGING CAPACITY: long, like all sweet wines, time works for him. BOTTLE SIZE: 0.50 l, 1.5 l. ORGANOLEPTIC NOTES: The drying of about a month and a half guarantees a high concentration of sugars and some natural transformations of the grapes contribute to giving extraordinary fragrances of apricots, rose petals, papaya and quince. Sweet and fleshy mouth, but lively with citrus notes. It refers to nougat and candied ginger. PAIRING: Grape variety born to pair with the best desserts, in its passita form it prefers dry ones possibly enriched by some fruit with a prominent acid note.
