Malvasia is a vine with a unique history. Its name derives from the contraction of the name of the Greek city of "Monemvasia" located in the Peloponnese and means "one door", as the port of access to the fortress had only one entrance. Vinification : After crushing-destemming and soft pressing, fermentation takes place by means of a small mass of grapes harvested 10 days before, which ensures a pied de cuve of native yeasts, the only ones able to express our terroir. The fermentation is carried out at low temperatures (13-14 ° C) and, before the total exhaustion of the grape sugars, the temperature is further lowered (2-4 ° C) to stop the fermentation. After bottling without further additions of sugars and yeasts, the second fermentation takes place. The sparkling wine obtained with this method, since it does not require disgorgement, has a natural turbidity due to the yeasts and this allows for greater aromatic complexity and better shelf life. Perlage : Fine and persistent SENSORY CHARACTERISTICS Color : pale straw yellow, impenetrable to the eye due to its natural turbidity. On the nose : intense and persistent, floral with distinct hints of wisteria, broom and yellow flowers reminiscent of the fields in spring. In the mouth : quite intense, persistent, fine, fresh, harmonious, pleasantly acidulous. PAIRINGS This wine can be served alone as an aperitif, appetizers and raw fish, shellfish, first and second courses based on fish.
