The grapes are harvested in the second half of September, when they reach full technological maturity according to the sugar content and total acidity. The harvest is done by hand in boxes in the coolest hours of the day.

The vinification is carried out in compliance with the tradition and the rules of the production of organic wines by applying the modern principles of the enological technique. The grapes are selected, de-stemmed and softly pressed. The free-run must obtained is refrigerated at 12 ° C, hyper-oxygenated and decanted for about 12 hours. The clear must that separates is decanted and fermented at a controlled T ° of 14 ° C. The wine obtained is quickly separated from the lees and stored in steel tanks at a temperature of about 14 ° C. After a short period of aging of about 4 months, the wine is stabilized, filtered and bottled. In all stages of winemaking, the rules laid down by the regulations for the production of organic wines are respected in order to guarantee and protect the genuineness and wholesomeness of the product. In particular, the application of the winemaking technique by hyperoxygenation of musts allows to use very low doses of sulphites for the conservation and bottling of wine, much lower than those foreseen also by the regulations in force.
