Of glacial origin: gravelly moraine with the presence of limestone.

The grapes are harvested in advance of normal ripeness. Strictly produced in the classic method respecting all stages of production. The Spumante base is generally bottled by June of the year following the harvest, and follows the refermentation and aging on the lees in the bottle. The bottles are stacked in special rooms at a controlled temperature and in the absence of light. After the long fermentation period, the lees are eliminated with subsequent addition of the dosage syrup before final capping.
Approximately 50 months from the harvest.
View : Extremely fine bubbles, chains and light mousse. Color : Straw yellow with golden reflections. Bouquet : Intense and full with hints of ripe pear and a citrus and dried fruit finish. Taste : Excellent complexity, extremely elegant and savory with an interesting citrusy final freshness.
Particularly suitable with raw fish dishes but also fatty baked fish.
