Of glacial origin: gravelly moraine with the presence of limestone.
AVERAGE AGE OF VINES
The grapes are harvested in advance of normal ripeness. Strictly produced in the classic method respecting all stages of production. The Spumante base is generally bottled by June of the year following the harvest, and follows the refermentation and aging on the lees in the bottle. The bottles are stacked in special rooms at a controlled temperature and in the absence of light. After the long fermentation period, the lees are eliminated with subsequent addition of the dosage syrup before final capping.

View : White foam and persistent perlage, with very fine bubbles indicating a long period of aging. Color : Brilliant straw yellow. Bouquet : Intense and fragrant with biscuit notes and slight hints of hazelnut in the finish. Taste : Persuasive of excellent complexity.
Excellent as an aperitif, it accompanies raw fish, excellent with cured meats.
