VINIFICATION
Soft pressing of the whole grapes.
Fermentation at temp. constant (18 °) for 20 days in stainless steel. The bottled wine remains for at least three months in the cellar.
PAIRINGS
To be dared with raw seafood or with a calm risotto with clams. Absolutely delicious, and vegetarian, with zucchini parmigiana, courgette flowers and buffalo mozzarella.
