PRODUCTION AREA Municipality of Gavorrano Locality Grilli. In the valley between Vetulonia and Giuncarico. In the heart of the Tuscan Maremma.
VARIETY 100% Sangiovese vinified in white.
TYPE OF SOIL Clayey-skeletal soil, based on Galestro (clayey schist stone) and Alberese (marly limestone).
AGE OF VINES 15-20 years
VINIFICATION Soft squeezing of hand-picked Sangiovese grapes only. The must obtained is slightly oxidized and rests at a low temperature in steel for a few days to amplify the aromatic extraction. Low temperature fermentation with a selected blend of indigenous yeasts. Evolution for 12 months on the fine lees. Aging for 6 months in new Allier tonneaux follows; in wood, various bâtonnage operations follow one another which give complexity and intensity to the wine.
TRAINING SYSTEM Spurred cordon and Guyot
COLOR Intense straw yellow.
PERFUME Bouquet with floral and delicate aromas; releases hints of white pulp fruit and light notes of aromatic herbs.
PAIRINGS Cooked fish appetizers, first courses prepared with white sauces, stewed or grilled white meats, seasonal vegetable ratatuille.
TASTE On the palate it is mineral and fresh, supported by good acidity. The structure of the wine is enhanced by toasted notes of vanilla and caramelized notes.
NOTES Persistent and elegantly velvety, a wine to be enjoyed in its captivating breadth. It wants to be the evolutionary step of what was the pioneering experimentation of white vinification of Sangiovese grapes and the achievement of the goal of a totally organic production.
