VINIFICATION Harvested by hand in crates at the end of September, destemming, fermentation in steel with indigenous yeasts at a controlled cellar temperature, maceration on the skins for up to twenty days depending on the vintage.

COLOR Intense yellow tending to golden.
BOUQUET Wide and intense bouquet with aromas of dry hay and chamomile, acacia honey and white pulp fruit.
PAIRINGS A wine to be enjoyed accompanied by recipes based on eggs, grilled vegetables and fresh cheeses.
TASTE Full-bodied, enveloping on the palate, with a dense aromatic texture innervated by a long mineral trail.
NOTES This line includes autochthonous karst varieties that express their most typical and sincere character. During the maceration of wines, we follow the patterns of an extremely elegant process. When we want to stimulate the physical processes in the formation of wine, we allow the wine to partially mature in Slavonian oak barrels. The wine is made from carefully selected bunches that most directly express the characteristics of our Uje vineyard and our land.
AGING Aging of at least 12-18 months on the yeasts and waiting for all the physical processes of the wine: malo-lactic fermentation, stabilization. Bottling after 3 years without filtration. Based on the natural evolution of the wine, partial maturation can take place in used Slavonian oak barriques, bottling without filtration after 2 years. Refinement in the bottle for at least one year.
