Honey is obtained from the flowers of this wild tree, which grows naturally on our hills, and is produced during the month of May. It has a light yellow color that ranges from straw to light amber, a light and characteristic smell and a sweet and delicate taste. The humidity is around 16-17% and crystallization is missing or very delayed (almost 1.5-2 years). Due to its sweetness, it is the favorite type of honey for children and can also be used to sweeten drinks, as its mild taste only slightly affects the flavor of the drink.
