The individual vines, after being selected, age separately in purity and with different times depending on the characteristics of the vines themselves. For this limited edition, aging takes place in large vats (110 hectoliters) with thick staves. 37 months for Grappa di Nebbiolo 44 months for Grappa di Brachetto 36 months for Grappa di Dolcetto. Grappa di Moscato, on the other hand, rests in small 7-hectolitre barrels for 40 months. Subsequently the blend is made and followed by a further 11 months of refinement.
