We cultivate about four hundred trees, without any type of chemical intervention. The cultivars are mainly Dritta and Leccio del Corno, with a small percentage of Leccino and table olives (Intosso, Santa Caterina), according to the traditional use of Abruzzo families in our area. For each variety we choose the most appropriate moment for harvesting, which takes place completely manually, and we work the olives within a very short time, to reveal their freshness and to safeguard their integrity. Oil is the product that more than any other reminds us of the scented wind of our hills.
Leccio del Corno 40%, Dritta 40%, Leccino plus table variety 20%
Limpid straw green. Medium fruity. Clean nose, broad, green, notes of almond and artichoke, green apple and hints of tomato. Pleasant and decisive in the mouth, with harmonious and persistent bitterness and pungency. It goes perfectly with legume soups and vegetable soups, red meats and grilled vegetables, tasty salads. Perfect on roast cod with Abruzzo-style grilled peppers.
