Foho Fiorentino: gives everyday life a fiery note…
The Cavalli name stands for products of the highest quality in Italy and around the world: Foho Fiorentino is a very special "warm" delicacy from the Cavalli house. Spicy because "Foho" on the one hand means fire and on the other hand because it is a fiery chili oil. The Habanero peppers are fermented in extra virgin olive oil using a process specially developed by Tommaso's brother-in-law, Stefano. This way, the flavor of the fresh fruit - both the pungency and sweetness of the Habeneros - is delicately preserved in the oil. The heat can be enjoyed in well-dosed quantities by sprinkling the oil sparingly on vegetables or grilled meat, for example. Whenever life needs a little sharpening.
Cavalli - synonymous with Italian lifestyle and style
When you hear the name Cavalli, you immediately think of the extravagant creations of the designer Roberto Cavalli, which can be admired on catwalks around the world and worn by international stars. But the name Cavalli means even more. For example, for the successful trotting horses that his son Tommaso raises on the Tenuta degli Dei. For the fine grappa, which comes from its own pomace. Or for the famous Roberto Cavalli Vodka, which should not be missing from any jet-set party. But Cavalli is also synonymous with the new Ginarte, refined with Tuscan herbs. And last but not least: for some years now the Cavalli name has been synonymous with great Chianti Classico wines! The Horses are simply a family with a sense of good taste…
Red wines with an international flavor and Tuscan roots
Tommaso has only been active as a winemaker since 2000. He was simply of the opinion that it would have been a shame not to grow wine on this piece of land in the heart of Chianti Classico. This is why he asked the opinion of the oenologist Carlo Ferrini, known beyond the borders of Italy. And with Tommaso he was in agreement one hundred percent. They jointly divided the five hectares in question into parcels. Only the international grape varieties Alicante, Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot have been planted here. And in 2004, the first Cavalli wine was produced: Tenuta degli Dei Cavalli Toscana IGT - a blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot. Later another IGT, Le Redini, was added to the range. It is a blend of Alicante and Merlot grapes. Since 2013 Cavalli has also been producing a Chianti Classico under the name Forcole. The necessary Sangiovese grapes come from a vineyard very close to the property that Tommaso has rented. There is a second vineyard on the Cavalli property in Florence. Alicante grapes from around 1,800 grape varieties are also processed on the Tenuta degli Dei.
Tenuta degli Dei: a heavenly estate with horses, dogs, llamas and vines
In the early 1970s Tommaso's father, the famous Italian fashion designer Roberto Cavalli, bought the property below the Romanesque church of San Leolino, which is just a hill from Panzano in Chianti. For several years the designer, originally from Florence, has used the estate as a place of silence and tranquility away from the hustle and bustle of the jet-set fashion world. Since 1989 Tommaso Cavalli, Roberto's son, has lived with his wife and children, two dogs, llamas and many noble trotting horses on the 70-hectare property.
