The hills between Val d'Orcia and Val di Chiana are ideal for the cultivation of olives and for the production of excellent quality extra virgin olive oil. In Avignonesi we have 2,270 plants and in 2018 we produced 2,175 liters of certified organic extra virgin olive oil, all processed in our oil mill. Yellow in color with vibrant green undertones, our 2018 olive oil reveals delicate aromas of green grass and artichokes. Silky and velvety to the taste it expresses notes of almond and a slightly spicy finish.

Collection

November 15. We collect the olives during the sunny hours of the day, manually and with the help of facilitators. The olives are transported directly to our oil mill at Tenuta La Selva where they are washed and pressed on the same day.

Crushing

The mill works on a disc system, which reduces the trauma to which the olives are subjected and better preserves the properties of the fruit.

Kneading

The olive paste is then gently mixed in the malaxer where it is cold worked (all the processing processes are cold), for a short period, which varies according to the degree of maturity of the olives.

Extraction

The extraction takes place by means of a two-phase decanter that separates the pomace and the vegetation waters from the oil. The oil is then subjected to centrifugation to eliminate the last residues of vegetation water.

Filtration

The new olive oil is quickly filtered to ensure a better shelf life.
