Anima oil makes what is essential for Argiano the protagonist: the soil, vehicle of a product with a very specific identity, is obtained from a recently discovered limestone section whose structure enhances its body and intensity, highlighting fresh notes of herbaceous and fruity. Already at the beginning of November of each year, the olives are harvested by hand and, on the same day, processed in the continuous cycle plant in the nearby Frantoio for the extraction of the precious oil. With a clear appearance, the new oil is green in color with golden reflections. The scent is fruity and fresh, clean, clear of olive but rich in herbaceous fragrances in which the artichoke and minor notes of almond dominate. The flavor is characterized by amplitude and harmony, with vegetal hints of artichoke and, to a lesser extent, tomato and celery. A light and balanced bitter-spicy note gives liveliness to the palate. Raw it is excellent for dressing soups, salads, legumes, bruschetta or the famous pinzimonio.
