Harvest: Strictly hand-picked, second decade of September after grape selection in the vineyard.
Vinification: Once the free-run must is obtained, fermentation takes place at a controlled temperature in steel, 14 ° C-16 ° C. The maturation will continue for about six months with constant bâtonnage.
Tasting notes: straw yellow colored wine, typical scent of pulpy fruit such as peach, yellow plum and floral scents. It has an intense taste and good persistence.
Food & wine: it goes very well with slightly aged cheeses, fish-based first courses such as tuna, clams, mussels and vegetables.
In particular, we recommend pairing it with the following typical dish: granetti with broad beans.
