Grape variety also called Trebbiano scienciato, that is sparse bunch, maintains good acidity until phenological maturation is completed. Passerina vinified in purity enhances its marked qualities of freshness and aromaticity.
Vinification : Cryomaceration on the skins for 48 hours at low temperature, controlled fermentation over 20 days, maturation on the noble lees with frequent batonnage. Organoleptic characteristics Appearance: straw yellow color. Nose: fruity hints of apple and citrus, floral jasmine. Taste: on the palate it is fresh, delicate, not too structured, never rude, with tasty peaks of flavor and a mineral finish with almonds and flowers.
