PAIRING Red meats, fatty fish such as salmon and baked turbot.
TASTE In the mouth it is particularly harmonious, velvety and persistent. Wine suitable for long aging.
NOTES The Sassella area includes just under 120 hectares of terraced vineyards between the municipalities of Castione Andevenno and Sondrio. The name Sassella refers to the importance of the rocky outcrops particularly rich in iron on which a small layer of earth rests. The altitude of the vineyards ranges from 300 m above sea level in correspondence with the homonymous sanctuary up to 630 m above sea level in those in the Piatta hamlet. The wines of this area are recognized for their particular elegance and aptitude for aging. The vineyards are located in the hamlet of Grigioni (municipality of Castione), in correspondence with the sanctuary of Sassella and in the locality of Triasso (municipality of Sondrio).
AGING In 25 and 56 hl oak barrels for about 24 months. Pre-bottling assembly in steel tanks for 2 months. Refinement in the bottle in dark and cool cellars for one year before release.
