VINIFICATION The grapes, after destemming and soft pressing, are left to ferment in oak vats filled to no more than two thirds of their capacity, using indigenous yeasts. Fermentation lasts about 10 days at controlled temperatures between 27 and 31 degrees. Short pumping over is carried out in the initial phase and manual punching down of the cap
