VINIFICATION Selection of the grapes in the vineyard, fermentation and maceration for about 12 days in stainless steel containers, followed by malolactic fermentation in November

COLOR Intense ruby red, with purple hues.
BOUQUET Vinous at times fruity
PAIRINGS It is perfect to drink in combination with cured meats and medium-aged cheeses, first courses, risottos, grilled red meats.
TASTE It is dry, full-bodied and pleasantly bitter
NOTES This wine, for those who do not know it, turns out to be a real surprise: its name can deceive and lead the neophyte to believe it is a dessert wine, because it is a sweet one. In truth, the name has been attributed in the Langhe, thinking more about grapes than wine; in fact it has always been the table grapes of these hills, offered in autumn, with seasonal pears and boiled chestnuts from the nearby Alpine valleys.
AGING Refinement in stainless steel, bottling in the following spring. Marketing starting from the beginning of summer.
