VINIFICATION The clusters, de-stemmed, after the addition of selected yeasts are put to ferment in stainless steel tanks; the floating hat created by the skins is kept continuously wet. At the end of fermentation, after 7-8 days, the skins are sprayed for another 8-10 days, in order to extract all the useful substances. AGING Part in steel and a minor part in wood. ORGANOLEPTIC CHARACTERISTICS View - intense dark red with violet reflections. Nose - fruity, with hints of plum, blackberry and black cherry jam. Taste - full, harmonious with long persistence. PAIRING Tasty first courses, typical of Abruzzo cuisine, grilled or baked red meats, aged cow or pecorino cheeses.
