The name of our wine, unique in its kind as a red "to be drunk cold", is closely linked to the territory where it is born, Salento, called in ancient times "The garden of Italy" for the richness and variety of its fruits. In fact, this wine owes its name to one of the most delicious fruits that grow in this area: the fig variety which is characterized by its purplish-red color so intense as to approach black (“moro” in dialect).
Cold pre-fermentation maceration (5°C) continued for 5 days, in order to extract the varietal aromas, the color and the softer polyphenolic components; this is followed by racking and fermentation without skins at 18°C.
COLOUR: Purple-red with violet reflections. BOUQUET: Fruity notes of cherry, strawberry, currant and pomegranate. TASTE: Modern and dynamic interpretation of Negroamaro, striking for pleasantness, drinkability and sapidity.
