Nabui is one of the prestigious reds, together with Chio and Cavaliere Sardo, from the Cantina Sociale di Mogoro Il Nuraghe: a Monica di Sardegna DOC Superiore obtained exclusively from the native vine of the same name, whose name is a tribute to Neapolis, an ancient city Carthaginian not far from Mogoro, whose remains arise not far from some monica vineyards of the contributing members.
These vineyards insist on loose and deep sandy Quaternary-type soils, and are trained as saplings, with yields between seventy and eighty hectares. A context characterized by a Mediterranean climate, with mild winters and hot summers, mitigated by the salt-laden mistral wind. The harvest is carried out manually, with selection of the grapes on the vine, around mid-October - monica is a late cultivar - when the balance between sugars and acids is perfect and the endowment of aromas in the skins is rich. The grapes, quickly transported to the cellar, are immediately pressed and the marc left in contact with the juice for fifteen days, during which the fermentation is carried out by selected yeasts at a controlled temperature of around 25°C. Once the alcoholic vinification has been completed, Nabui ages partly in steel and partly in 15 and 30 hectoliter barrels for about a year, a size that allows a delicate oxygenation of the wine, before final refinement in the bottle. Nabui is presented in the glass with ruby and purple reflections, which tend towards garnet with evolution, and a good consistency. The nose offers intense, evolved and complex sensations, which refer to red and withered flowers, ripe wild blackberries and cherries in alcohol, red fruit jam, balsamic, spicy and toasted sensations of coffee and cocoa. In the mouth, Nabui is a complex red, warm and soft, with elegant tannins and interesting sapidity: an intense and persistent sip which in the aromas confirms the sensations felt on the nose. Nabui is a structured red, which as an aperitif can be combined well with aged and fatty cheeses such as certain Pecorino di Sardegna DOP; at the table, it goes well with intense, persistent and complex first courses such as tagliolini with black truffles, traditional appetizers such as lamb offal or structured second courses such as pork loin in cognac.
