VINIFICATION After a long maceration of the skins at a controlled temperature, the wine decants in steel tanks, to then pass, after malolactic fermentation, aging in oak barriques and tonneaux. AGING In wood for at least 12 months. ORGANOLEPTIC CHARACTERISTICS View - deep ruby red, with garnet reflections. Nose - intense and complex with hints of ripe cherry, with spicy notes. Flavor - full-bodied and round, remarkably soft, it has a persistent and pleasant finish. PAIRINGS Red meats, game, aged cheeses. NOTES This is a Red to which we pay particular attention. Vinified in small quantities, only in the vintages that guarantee the qualities we desire and a vocation for aging: each harvest has its own peculiarities. It does not undergo a strong filtration, therefore it can present a natural deposit.
