Our interpretation of this autochthonous wine enhances the freshness of the Barbera and the bouquet of the Croatina giving rise to a fresh, soft and fragrant wine, with strong territorial roots but with a modern drinkability.
TYPE Red wine - Oltrepò Pavese DOC PRODUCTION AREA Oltrepò Pavese. First hill strip with south-east exposure, altitude 250 mslm . VARIETY Croatina, Barbera, Uva Rara SOIL TYPE Calcareous-clayey soil VINIFICATION The grapes, present together in the same vineyard, are harvested manually in 20 kg boxes and placed overnight in a cold room at 10°C. The next morning the bunches are destemmed, the grapes selected by optical sorting and subsequently gently pressed. The crushed grapes are loaded into steel fermenters by gravity, without the use of pumps. After 48 hours of cold maceration (10°C) the alcoholic fermentation starts with frequent pumping over for about 14 days. CULTIVATION SYSTEM Guyot COLOR Deep ruby red. BOUQUET Complex nose characterized by hints of blackberries, plums and a light toast. FLAVOR On the palate it is fresh but at the same time enveloping with a good persistence on the palate. AGEING The wine is aged for 12 months, partly in steel and partly in 5 hl oak tonneaux and 15 hl oak barrels.
