Intense ruby red colour. The nose is fragrant with an overflowing fruitiness of ripe cherries. On the palate it is warm and intriguing, with a pleasant sensation of softness. Serving temperature 12°-14°C.
Grape variety: Teroldego on the old Schwarzmannn rootstock (V.Riparia x V. Rupestris). Training system: Double Trentino pergola concatenated with planting layouts equal to m. 5.00x 0.60. Three thousand three hundred vineyards per hectare. Two fruiting heads per vineyard with a total load of 20 buds. Soil: Alluvial, gravelly, former river bed and relative impluvium of the Noce stream, made up of pebbles, called “sassi robi”, covered by a superficial layer of vegetable earth. Vinification: Novello di Teroldego is produced with the particular technique called “Carbon Maceration” designed to enhance the fruitiness of the grapes in the wine. A few days before the Novello di Teroldego harvest, a small quantity of grapes is harvested to prepare the starting must. Then the real harvest takes place in crates and the perfectly whole grapes are decanted into the vats where the new must is already fermenting. In this environment rich in carbon dioxide, given off by the fermenting must, carbonic maceration takes place for about eight days at a temperature of thirty degrees centigrade. The carbon dioxide attacks the malic acid, giving roundness to the must; in fact, tasting the berry it has a pleasant hint of sparkling cherry. Finally the grapes are pressed thus starting the real fermentation process in red for only two days. In fact, to refine the future wine, the grapes are drawn off, lightly pressed and the fermentation is completed in white. After a few weeks of decantation, it is bottled. Comment: And so the novello is finally ready to be tasted, celebrating the arrival of the new vintage.
