Denomination Salento IGP Protected Geographical Indication Grapes: 100% Negroamaro Production area of the grapes: comes from vineyards over eighty years old located in the upper Salento, in Lizzano. Vinification: hot fermentation of the skins and cold fermentation of the juice, with malolactic fermentation induced at the same time as the primary fermentation. Maturation: the wine rests in concrete tanks for two years; aging in bottle for at least one year. Tasting notes: Intense red color with violet reflections. Floral and spicy aromas, rose petals, violets, white pepper, cinnamon and Mediterranean scrub with mentholated sensations. On the palate elegant, clean with firm but velvety tannins, perfectly integrated with the fruit. Concentrated with a more than persistent finish. Recommended food pairings: to be appreciated alone for a magical moment, it can accompany important cheeses, risottos, winter soups, baked lamb, complex roasts. Serving temperature: 17-18°C Alcohol: 14.5%
