It is obtained from the exclusive vinification of Pignolo grapes, an autochthonous dark berried variety currently at the center of a process of rediscovery and enhancement, also thanks to the work of this company. On the land of Eocene origin, the vines find all the nourishment necessary to grow luxuriantly. Once fully ripe, the bunches are carefully selected by hand. Upon arrival in the cellar the grapes are de-stemmed and pressed. This is followed by alcoholic fermentation, which lasts on average from two to three weeks and involves the use of wooden vats. For refinement, the company focuses on oak barriques, where the wine rests for two and a half years. Pignacolusse Venezia Giulia IGT can be appreciated already after bottling, as well as following a further evolution of 6-7 years.
