Southwest exposure Climate: Mediterranean, low winter rainfall and windy and sunny summers Average age of the vines: 30 years Training system: low espalier tree. Planting density of 5000 vines per hectare and production of 35-40 q. Harvest: manual in small 10 kg baskets and selection of the grapes upon arrival in the cellar, second ten days of October. Vinification: maceration at a controlled temperature and subsequent alcoholic fermentation at a temperature of 24°C. The malolactic fermentation takes place in small oak barrels, in which the wine completes its refinement cycle for the following 12 months. Colour: deep ruby red Smell: hints of sweet spices and small red fruits tending towards jam Taste: soft and delicately tannic. Harmonic Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C – 70%. Serve at a temperature of 16°C Pairings: red meats, roasts, sausages, cured meats and seasoned or blue cheeses. Wonderful for meditation.
