Classification: Cannonau di Sardegna Denomination of Controlled Origin Rosé Grapes: Cannonau 100% Origin: Vigna Is Crabilis Ussana and Audarya Serdiana Soil: calcareous-clayey soils at 160 – 200 meters above sea level Climate: Mediterranean, low winter rainfall and windy and sunny summers Average age of the vines: 20 years Training system: low espalier tree. Plant density of 5000 vines per hectare and production of 60-70 q. Harvest: manual in small 20 kg baskets and selection of the grapes upon arrival in the cellar. First ten days of September Vinification: soft pressing and cold stabilization of the must for 4-5 days. Fermented in steel vats at a low temperature. Rest on the fine lees for a short time, for a natural stabilization of the wine and to obtain a better gustatory harmony of the wine. Color: claret pink Smell: fruity, with notes of citrus and tropical fruit Flavour: fresh with a marked minerality Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C – 70%. Serve at a temperature of 9-11°C Pairings: due to its characteristics, the rosé goes well with a wide range of dishes, from amberjack carpaccio with vegetable brunoise and green apple, to lobster.
