Production Area: In the countryside of Cerignola (Fg) Wine type: Organic red wine. Soil composition: Mainly calcareous. Training system: Spurred cordon. Planting density: 5,000 plants per hectare. Harvest: End of August and first ten days of September. Vinification: After a careful selection of the grapes, the bunches are destemmed and subjected to a very light soft pressing. Then they are vinified traditionally, for 20 days at 20/24°. At the end of the malolactic fermentation, the wine undergoes a short passage in wooden tonneaux for about 3 months.
