Production area: Agro di Cerignola (Fg) Wine type: Organic red wine. Soil composition: Mainly calcareous. Training system: Spurred cordon. Planting density: 5,000 plants per hectare. Harvest: End of August and the first ten days of September. Vinification: After a careful selection of the grapes, the bunches are subjected to destemming and a very light crushing fluffy. Then they are traditionally vinified, for 20 days a 20th. At the end of the malolactic fermentation, the wine is decanted into large vats 20 hl oak, for 10 months. Finally, without any clarification, the wine is bottled and left to age for at least 3 months, before placing on the market.
