At sight it is ruby red. The nose is expressed with fruity notes of ripe red fruit, floral notes and sweet spices. On the palate it is soft, with an excellent balance between the tannic and acid components and a good persistence
NAME: Puglia IGT Soul of Nero di Biancardi PRODUCER: Michele Biancardi VARIETY: Obtained from pure Nero di Troia grapes CULTIVATION: Vines trained with the spurred cordon system, with a planting density of about 5000 plants per hectare, on a mainly calcareous soil. HARVEST: The grapes are harvested between the end of September and the first ten days of October. VINIFICATION: After a careful selection of the grapes, the bunches are destemmed and lightly and softly pressed. A traditional vinification follows for 20 days at 24 degrees. AGING: After the malolactic fermentation, the wine is decanted into large 20-hectolitre oak vats and left to age for 14 months. This is followed by refinement in the bottle for about 3 months. WINE PAIRING: Biancardi's Anima di Nero is recommended to accompany first courses with meat sauce, red meats and medium-aged cheeses. SERVICE TEMPERATURE: Serve between 16 and 18 degrees.
